Condensation in Your Conservatory
Condensation forms when warm, moist air meets a cold surface, and an old roof gives it plenty of cold surfaces. Ventilation helps, but it can't fix a poorly insulated roof.
A properly insulated roof reduces those cold surfaces and helps the room stay drier. Windows, ventilation and how you use the room still matter, so we'll look at the whole picture. If you're also seeing drips, check whether it's a leak.
